Cooking with Fire – Paula Marcoux’s new book. If it’s hot cook with it.

It was a conversation with Paula Marcoux that set us off building our cloam oven last year.  Several batches of bread and pizza later it has had to be dismantled while we have building work done. It will be back.

Paula has meanwhile written her first cookery book Cooking With Fire published last week. I am waiting fairly patiently for my copy to arrive. As an archaeologist and food historian Paula is well placed to explore traditional cooking processes. She is a also a hands-on practical person who enjoys the challenge of getting the best results. The press release Paula has sent me enthuses about 100 recipes and instructions for building a tannur (called a tandoor in the UK) and a wood-fired masonry oven. I like the claim that ‘wood-fired cookery is a hot trend’!
